Conteúdo:	The acerola shrub (Malpighia ermaginata; see appendix of chapter 1) is a tropical plant that produces fruit with a large concentration of vitamin C. It is native to the Caribbean Islands. Northern South America. Central America and Southern Mexico. In Brazil its cultivation has increased from 1988 to I992. owing to the discovery of its importance to human nutrition as at result if its richness in vitamin C estimated at between 1.200 and 1,900 mg/100 g of pulp (Paiva et al., 2003).
